Pie Pastry



2 cups flour
1/2 tsp salt
2/3 cup shortening
ice cold water

This is about as basic a pie crust as you can get. Mix together the flour and salt. Rub in shortening either by hand or with a pastry blender. The shortening should be in the size of peas. Add the water a tablespoon at a time until the dough comes together. Do not overwork the dough or it will be tough. Gather dough into a ball and wrap with plastic wrap or wax paper. Let rest in the refrigerator for 10-15 minutes and roll out on a lightly floured surface. This is enough to make a double crust 9 inch pie.
