Chocolate Almond Biscotti



1 cup toasted almonds, chopped
1cup sugar
2/3 cup cocoa
4 Tbsp butter
2 tsp baking powder
1 ½ tsp almond extract
1 tsp vanilla extract
½ tsp baking soda
½ tsp salt
2 eggs
flour

Preheat oven to 350F. In a large bowl, mix sugar, cocoa, butter, baking powder, almond extract, vanilla extract, baking soda, salt, eggs, and 1 cup flour. Mix on medium until blended, scraping down sides. Stir in almonds and ¼ cup flour.

Grease cookie sheet. Divide dough in half. On lightly floured surface, shape each piece into an 8 inch be 2 ½ inch loaf. Bake 35 to 40 minutes until a toothpick inserted in center of loaf comes out clean.

Allow loaves to cool 10 minutes. Cut into ½ inch slices. Arrange cut side down on cookie sheet. Bake 5 minutes and remove to wire rack.
