Chocolate Almond Biscotti



1 cup toasted almonds, chopped
1cup sugar
2/3 cup cocoa
4 Tbsp butter
2 tsp baking powder
1 tsp almond extract
1 tsp vanilla extract
tsp baking soda
tsp salt
2 eggs
flour

Preheat oven to 350F. In a large bowl, mix sugar, cocoa, butter, baking powder, almond extract, vanilla extract, baking soda, salt, eggs, and 1 cup flour. Mix on medium until blended, scraping down sides. Stir in almonds and cup flour.

Grease cookie sheet. Divide dough in half. On lightly floured surface, shape each piece into an 8 inch be 2 inch loaf. Bake 35 to 40 minutes until a toothpick inserted in center of loaf comes out clean.

Allow loaves to cool 10 minutes. Cut into inch slices. Arrange cut side down on cookie sheet. Bake 5 minutes and remove to wire rack.
